I like cooking. But it might be a little misleading. Actually what I mean is that I like to eat delicious foods.

It has passed about 10 years since I live in Siem Reap. At first the cooking ingredients were limited. When I was over 50 years old, I became to want having Miso soup again at almost everyday meal. But at that time I could not get Miso at Siem Reap.

When I left Japan I was over 30 years old. At that time I did not say much about foods and rather it was OK to me if I can eat foods. Now I think it is a happy life that people can cook themselves or eat their favorite foods. Recently I recognized that cooking and eating are related to relaxing.

At Siem Reap we have tasty good rice. When I order to purchase the rice, the taste is different from one to the other. The tasty rice is Romdual rice. I recognized that the difference come actually from the difference of villages which produce rice. The rice from the area near Battambang is not tasty because they use chemical fertilizer. I recognized such rice is taste good that is produced from the villages where the farmers are using only organic fertilizer like cow manure in old style.

Recently several large supermarkets opened at Siem Reap and people can buy almost all kind of Japanese food stuffs, like Natto and Chikuwa (Fish sausage). We can buy every Shishamo with eggs. 10 Shishamos are sold at 1.25 dollars, so it might be cheaper than supermarket in Japan. Of course it is difficult to get fresh sea fish. But after I found the Korean-owned food shop which distributes frozen fish to hotels, my food ingredients become to almost perfect.

It is amazing. Come to think of it that we could eat mangos only at this dry season in the past days, but now we can buy mangos at city supermarket all year round. It might be brought from Philippines or Indonesia. It is amazing big demand create such situations. But it is not good that the sense of the season is lacking in foods.

Recently the bamboo plants are planted in Project site of "Wisdom from the Forest" (PWF) and are glowing well. I am looking forward to getting the bamboo shoots from there. And I want to feed fishes, actually my dream is feed gorgeous shrimps, a water hand long shrimps, although there are delicious Tonle Sap lake shrimp at the market. I dream of opening the restaurant where serves dishes made by PWF organic vegetables and such fishes and shrimps.

I imagine carrying the natural food ingredients restaurant next to create the natural textiles. Such things might be new PWF activities in future. But before then, we have to bring up the chef who can cook delicious meals. But now I am cooking Japanese like foods with others at PWF, thinking about such future dreams being relaxed.
